Jaime began his writing career at an English-language weekly newspaper in Guatemala, where he worked as an Arts & Culture Editor.

After finishing his MSc in Animal Science at Wageningen University in the Netherlands, he looked to combine his writing experience with his studies. Thus began his stint as editor for Meat International magazine (part of Reed Business Information).

He held that position for over three years, and worked together with Wiebe van der Sluis as technical editor of PPM (Poultry Processing Magazine).
Earlier this year he decided to go back to school and is currently pursuing studies to become a veterinarian at the University of Córdoba in Spain.

Will consumers go for cloned meat?

Very soon now, probably before the end of the year, the US Food and Drug Administration (FDA) will give its final decision as to whether the consumption of meat from cloned animals is safe. It is widely accepted by most pundits that the decision will allow the sale of these products to consumers.

FDA's proposal to hide irradiation

This last week (April 4), the Food and Drug Administration of the US government proposed to revise its labelling regulations for irradiated food. This proposal is no simple matter; in fact, it would be a major change in policy regarding irradiated food. (Comment 1)

Fighting the temptation

Over the past few years, many in poultry industry have lost sleep over highly pathogenic bird flu, either because it arrived unexpectedly within their country’s borders or because they worried it would somehow make its way there. The consequences have certainly been devastating for many as entire flocks have been culled, international markets closed their doors and local consumption plummeted. (Comments 3)

Carbon Monoxide in Modified Atmosphere Packaging

Over the past few months, a controversy has raged in the US over the use of carbon monoxide (CO) in modified atmosphere packaging (MAP) for meats. To bring everyone up to speed, MAP uses hermetically sealed trays to package meat within a mixture of gases different from that in the normal air that we breathe.
