The research paper, due to be published in Nutrition & Food Science Journal in June, confirms that eggs are a rich source of protein, as well as several essential nutrients, particularly vitamin D, vitamin B12, selenium and choline.
As well as being one of the most nutrient dense foods, Dr Ruxton’s findings also show that eating eggs helps a person feel fuller for longer and can therefore help with weight management and better diet quality. The antioxidants found in egg yolk may also help prevent age-related macular degeneration, an eye condition that can lead to blindness.
