Jaime began his writing career at an English-language weekly newspaper in Guatemala, where he worked as an Arts & Culture Editor.
After finishing his MSc in Animal Science at Wageningen University in the Netherlands, he looked to combine his writing experience with his studies. Thus began his stint as editor for Meat International magazine (part of Reed Business Information).
He held that position for over three years, and worked together with Wiebe van der Sluis as technical editor of PPM (Poultry Processing Magazine).

Will consumers go for cloned meat?

Carbon Monoxide in Modified Atmosphere Packaging
Over the past few months, a controversy has raged in the US over the use of
carbon monoxide (CO) in modified atmosphere packaging (MAP) for meats. To bring
everyone up to speed, MAP uses hermetically sealed trays to package meat within
a mixture of gases different from that in the normal air that we
breathe.
